Easter baking



We baked a Chocolate Chip loaf, a Banana & Choc Chunk Cake and loads of cupcakes... you would think I had enough of baking but no, I made dessert. Try to say this mouthful quickly... A 'Hot Cross Bun Bread and Butter pudding' - and it was delicious!!

Easter Bread & Butter Pudding
8 Hot Cross Buns
Butter
Apricot Jam
4 Eggs
1/2 cup of Castor Sugar
1 cup milk
1 cup cream

Remove the crosses from the buns if they are too hard. Halve the buns and spread with butter and jam. Cut into quarters. In a jug, whisk the remaining ingredients. Butter a baking dish and arrange the buns in the dish. Pour the mixture over about 40 minutes to 1 hour before you plan to bake it.

Place the dish into a large roasting tin and place in the oven. Carefully fill the tin with boiling water and slide into the oven. (This is easier to do when the dish is in the oven otherwise you might spill boiling water on yourself trying to place the tin in the oven). Bake in a preheated oven at 180 deg Cel for about 50 - 60 minutes. (I also covered the dish for the first half of baking as I don't like the top of my pudding to be too dry).

Serve with real custard and vanilla ice cream. This slightly spicy bun pudding is just so morish! Your guests will love you!
