Winter baking

I baked our favourite Buttermilk and Raisin Rusks but Becca convinced me to also make a batch of Choc-Chip this time.  Well... her ones are flying out of the container!

Pruning


After a beautiful morning at church with the girls, the balance of the day was spent in the garden with my parents.  My father still spends several hours every year pruning my many rose bushes.  I just run for bags, hats, water, plasters for his multiple scratches and the like.  Then afterwards, I offer coffee and some baked treat as a 'thank you'.

Necessary and good

Neither will He hide what's necessary and good for us and our family... for He has given us everything pertaining to life and godliness that we might live in His promises, living the life more abundant, that He might be famous in the earth!

The weather report

The last four days...

Starting on Saturday the 11th
We had so much rain, we could have rowed a boat across our 'lawn'





On Sunday the 12th ... the mountains were covered in snow






Monday the 13th was perfectly pleasant... as if it had no memory of the weekend.



Today, Tuesday the 14th... the clouds threatened all day and now its coming down in buckets.



So, as soup bubbled on the stove and teacups were regularly refilled, we attempted to keep warm as we went about our days.

Cape of Storms sustenance

We had such lovely weather earlier this week.... this weekend brought thunder, rain and hail.  So after breakfast in town, we left with a box of teatime treats to help abate the cold. Delicious!

Lemonade

Rebecca pulled out her recipe book this afternoon and made us a jug of lemonade... a very good recipe, just the right balance of sweet and sour, lovely on this sunny day!  All I had to do was procure the lemons from the tree for her.

Baked Meatballs

So good and easy... a favourite!

In a jug / bowl mix:
1 tin chopped tomatoes
a splash of water
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
2 tablespoons worcestershire sauce
2 tablespoons chutney
 
In another bowl mix the following together (with hands is easiest):
1 X 500g packet lean mince
1 egg
1/2 cup oats
1/4 cup semolina / breadcrumbs
+- 3 tablespoons minced (very finely chopped) onion
1/2 cup grated zucchini
1/2 cup milk
1/2 cup grated Parmesan / hard cheese
1 teaspoon dried oregano
salt and pepper

Roll the mince mixture into balls, about the size of golf balls.  Place them in the fridge for minimum 40 minutes (but you can leave all afternoon) covered with cling wrap.  Remove.  Sprinkle a little flour on them.  Place in a baking tray.  Take the jug of sauce and pour around the meatballs.  Bake for about 35-40 minutes... moving them gently about in the sauce about halfway through the cooking... will thicken and be simply delicious over spaghetti.
