Comfort

Thinking about this...

God is the same, yesterday today and tomorrow.  He is faithful.  The scriptures bring comfort and remind us that what he did, he can do again (easily).   Have hope.

Plum jam

This jam is quite tart but with a lovely fruity taste and virtually guilt-free.

I used 6 cups of chopped plums and 1/2 cup of honey and 1/2 cup of xylitol.  I put it on high heat for about 15 minutes and then cooked it slow and long (45 - 60 minutes) until it thickened.  There was a lot of liquid initially but it did reduce... you just need patience as there is very little sugar in the mixture so it takes longer.

A beautiful Baby

My cousin Jose and his lovely wife Lucille have a baby!!  She is too beautiful!

Brownies

I made these black bean brownies last weekend and they were brilliant... 

I will be making another batch today.  

Last night

Dusk... Its the best part of the day... breezy and the heat is bearable. A good time to go for a walk.

It was so hot that it was almost 9pm when I ate... quinoa, salad and pumpkin & kale stew.

Drought

'The sunny spell of weather continued unabated, and the first rapturous welcome to the heat began to turn to disenchantment.  The flaunting poppies dropped their silky petals... Brown patches appeared on lawns and cracks grew wider on well-trodden earth.
Stern notices appeared in the local press about the use of hoses and sprinklers in the gardens...'

Insanely good cauliflower 'wings'

Found this recipe for baked cauliflower 'chicken wings' type thing on Hot for Food on youtube and happened to have some in the fridge. I thought they were fantastic!

Christmas Tea

My sister and brother-in-law gave me this tea for Christmas and it is so delicious! I had another lovely cup this morning! And it is Christmassy... loose tea with orange, rose blossoms, vanilla, cloves and cardamon.

A new year getaway

We were away for a few days in Greyton... a lovely relaxed little town surrounded by their 

beautiful mountains and hospitality

and spent New Years day at Onrus beach.  Perfect!
