Lovely easy Mexican style snack.
Grab a couple of tortillas. Grate lotsa cheddar. Chop some spring onion (and/or thinly sliced leeks, which I just cook for a sec) and lots of fresh chilli and parsley. Place a tortilla in the pan and add the filling bits, then add another tortilla to cover. Dry fry (no oil required) on a medium heat until all heated up and delicious. Optional extras: Add bacon or chicken or pepper. Crazy easy!!
I also make one for Rebecca less the chilli.
If you have energy, make your favourite recipe of guacamole as well as a little tomato and onion salad and you have a really filling snack or light supper.
