I am really fond of chicken-mayo at the moment! My favourite way is to pulse the cooked chicken so its still a bit textured but not very chunky, then add the mayo. I have recently discovered Jalapeno Relish! Hello! When I want some heat to my chicken, I have it this way with salad, cheese and the relish! Sooooo yum!
When I want a sweeter note to my chicken-mayo, then I do the same as above but I lose the relish & cheese and add cranberries to the chicken. Truly delicious - especially on my favourite crusty baguette!
I want to eat that!!!! YUMMY!!!
