What a packed Hillsong weekend... to excited to sleep, to tired to blog.  Here is a snippet of where I was, and it was beautiful and inspiring.

Cowboy food

I've been saving this for when the weather gets a bit cooler, to go with thick soup... so the day finally arrived. American Cornbread.


I felt like Paula Deen taking this cornbread out of the oven and smearing it thick with butter while it was still hot, except in the south they probably use their granny's 'broken in' cast-iron skillet. Delicious.

An end flush

My roses have had an end of summer flush... a delight to walk in the garden before winter creeps in.
We can already hear the frogs in the shallow river next to our home, after their hibernation.



Becca, the cupcake lover, iced these and set us a lovely tea...

To the Heels

I haven't laughed as much in a while... Becca and I did a little shopping - well, mostly trying on things and having a giggle. Case in point - big big glasses.



And she then sent her father a sms picturing this top that she had 'bought' for him. We laughed so hard because we knew that he wouldn't even sleep with this top on, a sleeveless zipper top.



And we found so many gorgeous shoes.






These felt very glamorous... towering heels but I couldn't walk a step.

Easter baking

We baked a Chocolate Chip loaf, a Banana & Choc Chunk Cake and loads of cupcakes... you would think I had enough of baking but no, I made dessert. Try to say this mouthful quickly... A 'Hot Cross Bun Bread and Butter pudding' - and it was delicious!!

Easter Bread & Butter Pudding
8 Hot Cross Buns
Butter
Apricot Jam
4 Eggs
1/2 cup of Castor Sugar
1 cup milk
1 cup cream

Remove the crosses from the buns if they are too hard. Halve the buns and spread with butter and jam. Cut into quarters. In a jug, whisk the remaining ingredients. Butter a baking dish and arrange the buns in the dish. Pour the mixture over about 40 minutes to 1 hour before you plan to bake it.

Place the dish into a large roasting tin and place in the oven. Carefully fill the tin with boiling water and slide into the oven. (This is easier to do when the dish is in the oven otherwise you might spill boiling water on yourself trying to place the tin in the oven). Bake in a preheated oven at 180 deg Cel for about 50 - 60 minutes. (I also covered the dish for the first half of baking as I don't like the top of my pudding to be too dry).

Serve with real custard and vanilla ice cream. This slightly spicy bun pudding is just so morish! Your guests will love you!

A ride to the dam

We had a ride to the dam and then sat a while making a list of all the blessings we could see, hear and feel - on Becca's list was not being harassed by any dogs at her heels.

We love tea, and whenever Wayne is in England he brings back our favourites...

A little brighter

Normally my nails are plain, or brightened with a shimmer...



But sometimes you need a little colour... this is irresistible, it's called 'I Pink I Can!'
